The Absolute Best Paleo Chocolate Mousse

As I’ve mentioned before, Steve has a bit of a sweet tooth and I am trying to kick the addiction I have developed to processed sugar. My big dilemma is that I need chocolate. Yes, yes I do. So, how do I get around this issue? Find a Paleo subsitiute!! I’ve tried many different variations of Paleo Chocolate Mousse but none were quite right – so I came up with my own.

Ingredients:

• 1 x 440ml can of Coconut Cream (refrigerated for at least 24hrs)*
• 2 x Ripe Avocado’s
• 2 x tablespoons of Raw Cacao Powder
• 8 x Medjool Dates (soaked in warm water for an hour and pitted)
• ¼ Cup of Rice Malt Syrup (you could use Raw Honey or Maple Syrup if you’d like but reduce the quantity)

Method:

From your can of coconut cream, remove the liquid and keep separate (not to be used in this recipe) – you will be left with the thick part of the cream, which is quite pasty. (If you have refrigerated your can upside-down you simply need to open the can and pour the liquid from the top).

Add all ingredients to a high powered blender or food processor and blend until smooth.

Adjust sweetness and chocolate taste as needed.

Scoop into a container and refrigerate for around 2 hours.

When set, eat and enjoy!!

*I always keep at least a few cans of Coconut Cream in the fridge for recipes that call for the separation of the cream from the liquid. If you refrigerate it upside-down it makes this process easier. The longer you keep it refrigerated, the more the cream separates. I find a month is fantastic and therefore keep at few in the fridge at any time.

I use my Vitamix for this recipe and to be honest, it makes the mousse ridiculously smooth and creamy. I have tried making it in a food processor before but it wasn’t able to smooth out the skins from the dates as well as the Vitamix did.

This recipe has certainly helped me when I needed the sweet chocolately kick and didn’t want to go for the processed sugars. The best part is that it is dairy free too so my son can have some too.
